for roasting: 1,5 kg pork shoulder with rind, salt, ½ tsp. peppercorns, ½ tsp. allspice, cloves, 1 tsp. dried marjoram, 2 medium-sized carrots, 100 g Parsley, 1 leek, 2 onions, 2 cloves of garlic, 400 g pork bones, 1 T. oil, 400 ml meat broth, 400 ml beer
   
for red cabbage:: 1 red cabbage (1,5 kg), 2 apples, 1 onion (50 g), 2 T. lard, 100 ml red wine vinegar, salt, pepper, 1 tsp. sugar, ¼ tsp. ground cloves, applesauce for refining

Roast pork with dumplings and red cabbage

Preheat oven up to 220 ° C. Cut rind crosswise with the sharp knife. Crush 1 tsp salt, pepper, peppercorn, allspice and marjoram in a mortar. Rub the meat well with the herbs mix. Wash and coarsely chop carrots, parsley and leek.

Rinse pork bones in cold water. Grease the roasting pan with oil. Put the roast there with the rind on top, add vegetables and bones. Roast for approx. 15 min. on the second bottom rack in the oven. Pour in the meat broth and beer and leave in the oven at 220°C for another 30 minutes. Then put the temperature at 200°C and bake the meat there for another 1 ¼ hour.

Take out the roasting pan from the oven and Remove the meat from there. Strain through a sieve the liquid from vegetables and bones, after that put the liquid in a pot.

Heat the oven up to 200° C. Put the meat again in the roaster pan (with the crackling facing upwards) and brush the crackling with the salted water. Put the meat on the second bottom rack in the oven for 5-6 minutes. Then switch off the oven and allow the roast to rest for about 15 minutes. Take out the bones from the sieve. Press the vegetables through the sieve to the liquid. Then boil up the sauce, season it with salt and pepper.

Prepare the dumplings according to the description on the package and keep them warm. Clean the red cabbage, remove outer leaves and central, cut it into slices and allow it to drip off.

Pare the apple, pit it and cut it into cubes. Peel and chop finely the onion. Heat the lard and stir in the cabbage and onion. Put vinegar and water, add apples and spices. Stew the cabbage for about 40-50 minutes, season with apple jelly. Serve it with meat and dumplings.
